Pecos Pit Bar-B-Que Announces Expansion to Yelm

Pecos Pit Bar-B-Que announced on Wednesday, May 10, that a restaurant location is coming to the Nisqually Plaza in Yelm this summer. 

Customers describe its slow-roasted, wood-smoked barbecue as mouth-watering.

Brie Noble, with Pecos Pit, said an opening date should be announced within the next several weeks. She added that residents can expect Yelm’s newest barbecue establishment to be open by mid-summer. 

“Part of the whole plan is 2,600 locations across the United States. We’ve been searching all over Washington to discover what our next territory is. We’re trying to pick things that are off the freeway in the corridor area,” Noble said. “Eventually, it was decided that Yelm would be a great location for a Pecos Pit.”

The restaurant will feature dining options including a variety of sandwiches that feature chopped pork, beef brisket and smokey chicken. The business also offers bowls or platters that include either chopped pork, beef brisket, chicken thighs or all-beef hotlinks. The bowl or platter options include a macaroni and cheese bowl, a loaded baked potato or a salad. 

Pecos Pit will also sell pork ribs in quarter, half and full racks, as well as beef brisket, chopped pork, all beef hotlinks and smoked chicken thighs by the pound. It will also have a variety of sides, including what Noble described as “the best” potato salad, smoked mac and cheese, spicy beans and much more. 

“It’s a step up from fast food,” Noble said. “We’ll have healthier options and menu items for kids. But we’ll have all the meatier options and sides too.” 

In addition to opening a location in Yelm, Pecos Pit also announced it expects to reopen the Federal Way location before the year is over. Noble told the Nisqually Valley News the barbecue establishment plans to franchise. 

Franchising the barbecue establishment throughout Washington is done easier thanks to its “central kitchen” concept in Kent. 



The central kitchen houses five 1-ton smokers, which can smoke up to 10,000 pounds of meat at any point, Noble said. Each morning, drivers will pick up daily servings of barbecue from the central kitchen to deliver to its restaurant locations.

Noble said the central kitchen allows for smaller kitchens at restaurant locations, which creates more space within the establishment for seating, a bar and drive-thrus. She added that though everything is essentially reheated, they have the process down to a science.

In addition to freshly delivered smoked meats, sides at Pecos Pit are freshly made each morning. 

“The central kitchen is huge. It’s our corporate office, and houses a huge, massive kitchen. We do catering out of there, and we do food trucks, too,” Noble said. “That pit specifically will be our largest as we grow across the country. It’s a really cool facility. We call it the Disneyland of barbecue.”

Noble added that Pecos Pit has a “great” loyalty program and online ordering. As it arrives in the community, the restaurant aims to support local businesses and organizations. 

“Our commitment to serving up BBQ goodness hasn't wavered, and we're excited to offer all of our classic dishes, plus some new surprises,” the release states. “Whether you're in a rush and need to hit up our convenient drive-thru, or you want to stick around and chill at our bar, we've got you covered. And for those who prefer to enjoy their BBQ from the comfort of their own home, we have online ordering and delivery options too.”

Pecos Pit also offers catering services and can feed groups of up to 5,000 people. Orders must be placed 48 hours in advance. 

The restaurant will begin hiring employees amid its arrival to Yelm. The business is looking to hire a cashier, cook, general manager and assistant manager. For those interested, email jobs@pecospit.com
